Celebrate your Accomplishments… Basil Strawberry Lemonade

This week, I graduated for high school. I am rather happy to be done, and although I do not consider this to be a big achievement, I am glad to have completed that part of my life!

 

Now, I can move on and have much more focus, time and energy for meaningful activities. In the last 2 days, I have already accomplished so much.. and I am celebrating that!!

Strawberry-Basil Lemonade 

-One cup Strawberries

-1/4 cup Basil leaves

-One bottle fizzy-water

-Ice cubes!

Blend in the vitamix or regular blender and treat yourself by recognizing your achievements, no matter how meaningful they may seem to you!

Here is a wonderful recipe inspired by 101cookbooks, I was missing quite a few ingredients so I adapted it to this version!

These were delicous!

Give ‘em a try!!!

 

Honey Yogurt Tartlets

 

Crust

1 cup  flour
1/3 cup rolled oats
1/3 cup coconut oil
2 tablespoons Honey

Yogurt Filling:

1 cup plain Greek yogurt
1/4 cup Honey
zest of one lemon
2 eggs

Combine all of the crust ingrediants, and press into small tart pans (4)

Combine all of the filling ingrediants and pour into each crust!

 

Bake for 25 minutes at 350 degrees.

This is one of the very first few recipes I ever posted on Gangy Buffet!

I loved it then, and it was still as wonderful this time around!

1 pound green beans
4 ounces fresh goat cheese
Zest of 1 lemon
1 tablespoon lemon juice
2 tablespoons apple juice
pepper

salt
dill weed spice
1 cup corn
2 large tomatos, diced

2 tablespoon Olive Oil

Blanch the green beans (boil them 5 minutes) and combine all other ingredients! Enjoy!!

Last week we had a beautiful drink from my Vitamix, and I thought I’d share the recipe since tomorrow is graduation, and we will all be celebrating!

You should be able to do this in a regular blender, just add a little more water!

Pineapple Paradise Crush

-One can Pineapple, or a the flesh of a fresh pineapple

-3 cups of ice!

Blend it up, Drink it up!!

Here’s a wonderful partner approved recipe for apple pie pancakes.

I originally found the recipe from chocolate covered Katie: thanks Katie! You make vegan healthy yummy breakfast so EASY!

Apple pie pancakes:
-1/2 cup chopped peeled apple
-teaspoon baking powder
-two tablespoons oats
-1/3 cup flour
-teaspoon cinnamon
-1 tablespoon sugar
-1/3 cup almond/rice milk

Cook as you would any pancake, and serve with agave nectar!!!

Love these on days where Brownie batter pancakes and cookie dough pancakes aren’t already in my stomach!!!

Why we ALL need to eat better!

Yesterday, I found myself reaching into my sisters candy bag for some artificially sweetened and artificially colored and flavored candy…

I pride myself on my healthy eating habits, and my commitment to a better self.

WHY was I eating this?

Simple answer, it was as Tony Robbins calls it… a quick fix to a larger problem (my shaky commitment to healthy treats)

Of course, as soon as the candy hit my mouth all the expectations of sweet sugary cherry yummy-ness faded, as I was faced with the fact that I knew it wouldn’t do any good for my body.

In this moment of weakness, I had to options…

1) spit out the junk and find something fresh

2) eat it, and write a kick-butt blog post about it

I chose the latter, and I chose to from here on out, commit to a life where I not only pride myself on eating correctly, but also follow through.. even with the little things.

I know that this post, will now hold me even more accountable to make the right choices.

PS: We can all do this!!

Pushing your morning workout further…

I’m have to admit, I have a tendency to push away workouts, telling myself “I’ll do that tomorrow” or “oh, it’s fine I worked out the other day”.

It’s a tendency I’m glad to break today…

My aunt and I did a wonderful P90X workout this morning followed by some really nice yoga and working on the first stages of some advanced yoga poses.

Usually, I would have said “No, I’m not advanced enough to try this..” but this morning we shattered that belief, and replaced it with a new one  **My body is capable of so much more that I can possibly imagine**

 

Try adding this belief to your workout!

 

 

Here are so other new beliefs that will push you further in your workouts:

**It can either hurt shortly now, or it can hurt forever later**

**As soon as you feel you are reaching your limit, see your limit growing further from you as you practice.**

**Think you how nice stretching will be once you push through this move**

**Visualize your cells rejuvenate as you push through a breakthrough workout**

**As you reach the highest intensity of your workout, smile, it’s gets easier this moment on**

 

After your workout, take time to indulge in knowing you have pushed yourself!

Here is a quick list of what I’ve been up to!! Sorry I have not blogged in so long… But since we all know I’ve been gone from gangybuffet, what have I been up to?

Well….
-Ryan and I continued the tradition and made Easter cards (see on facebook!)
-I got really sick and had to stay home a few days
-I wrote a nine page paper in record time
-had lots of walks outside in the newly nice weather
- and found a lot of fun craft ideas (see my DIY pinterest!)

I’ve been so in love lately

I’ve been so in love lately

With two things:

-my perfect partner
-my new juicer.

Haha!
Lately we’ve been working on extra ways to give to each other, and I’ve totally enjoyed the phone calls and sweet sayings while he’s totally enjoying his increased smoothies and love sandwiches after work.

But really one thing I think we can both agree on that improve a day: fresh juice!

This machine is awesome. I trow stuff in, endure the awful loud noise, and seconds later… I’m in paradise enjoying this drink.

I really did NOT think homemade juice would be this impressive to me, but boy… I am obsessed!!

Now that I’m done ranting about juice, more about relationships.

A couple months ago I made a clear distinction in our relationship. This would be a place for me to give, and not a place to take.
This distinction has to me improved the way I feel more and more everyday, when you start looking into a relationship to give, things change. You are no longer depriving the relationship, you are expanding it.
And with both partners with the main focus on giving, you cannot even imagine the vast amount that both receive.

What about you, have you made distinctions in your relationship which have totally increases the level of energy, love and passion you feel?

Give this one a try: simply begin to approach your relationship to give. Be a giver, and do not take or expect… Simply allow the other to follow the bandwagon to years of happiness!

This can also be very beneficial in other relationships such as work, family, and friends!
